Spanish Rice

Spanish RiceI am pretty sure this recipe was meant to be a side dish, however I decided to serve it up on Vegetarian night for our main course. Served with a nice green salad it was a lovely meal. This rice has loads of flavor, and was quite easy, and has lots of vegetables which this mommy likes. I don’t think any of us missed the meat at all in this meal. As it only uses the stove top and not the oven this would be a lovely meal for the summer. If you must have meat it would taste great with a BBQ Chicken breast.

Recipe from Better Homes and Gardens New Cookbook

  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1 clove garlic, minced
  • 1 Tbsp. olive oil
  • 1 can diced tomatoes (28 ounce)
  • 3/4 cup long grain rice
  • 1 cup water
  • 1 tsp. sugar
  • 1 tsp. chili powder
  • several dashes hot sauce

1. Heat oil in large skillet, add onion, green pepper and garlic. Sauté until tender.

2. Add remaining ingredients. Bring to a boil. Reduce heat to a simmer and cook, covered, for 20-25 minutes until rice has cooked through.

3. Eat and enjoy!

This month I was assigned a vegan/vegetarian blog. Definitely new for me, but as we have vegetarian Thursdays every week, I knew a new meal would be easy to find. I chose this Pineapple Roasted Vegetables Recipe because I knew everyone would love it, plus we have a serious pineapple fanatic in one of our daughters. It was delicious, I loved the addition of pineapple in vegetables! So here is the recipe, I served it with a side of cous cous salad, and homemade bread, for you meat lovers out there, it would taste great paired with BBQ Chicken!

  • 1 can (16 ounces) Pineapple Chunks
  • 2 small zucchini sliced thinly
  • handful of baby carrots
  • 2 bell peppers chopped into chunks
  • 1/2 onion chopped into chunks
  • 3 cloves minced garlic
  • 2 tsp celery salt
  • 2 Tbsp olive oil
  • 1/2 tsp- 1 1/2 tsp cayenne pepper depending on how spicy you like it!

1. Mix together all ingredients in 13×9 baking dish.

2. Bake for 25 minutes at 425 degrees.

3. Eat and enjoy!

Sloppy Joes

SupperMy son informed us last night that this is his third favorite food ever! Kids are so funny, they are always cracking me up. This especially made me laugh because it reminds me of me. I love asking people there favorite things. So this begs the question, what is your favorite food?

Sloppy Joe Recipe from Allrecipes

  •   2 pounds lean ground beef
  •   1/2 cup chopped onion
  •   1 cup chopped celery
  •   1 (10.75 ounce) can  condensed tomato soup
  •   1/4 cup ketchup
  •   1 tablespoon white vinegar
  •   1/4 cup packed brown sugar
  •   1 1/2 teaspoons Worcestershire sauce
  •   1/2 teaspoon salt
  •   1/4 teaspoon garlic powder
  •   8 hamburger buns

1. Brown ground beef in large skillet until cooked through. Add onion and celery. Continue to cook over medium-heat for 5 minutes, covered.

2. Add remaining ingredients, (except bun , obviously), and stir until mixed , continue to cook for about 10 minutes to blend flavors. Serve on buns.

3. Eat and enjoy!

Oh and P.S, just in case you are wondering my sons first and second favorites are cheeseburgers and ribs :)
