Anyone else like coleslaw out there? I sure do, especially with a certain variety of foods, like Kentucky Fried Chicken. I also really like it with Pulled Pork, and of course I like to put a little bit right on the bun with the meat. Delicious! So of course early in the week while the pork was cooking away in the crock pot I also got the coleslaw ready.
Recipe from Southern Living Comfort Food
- 1/2 Cabbage chopped small
- 1/2 bell pepper chopped
- 1 large carrot, grated
- 1 Tbsp onion, grated
- 1 cup mayonnaise
- 1/8 cup sugar
- 1/8 cup Dijon mustard
- 1/8 cup cider vinegar
- 1 Tbsp celery seed
- 1/2 tsp salt
- dash pepper
1. Mix together first 4 ingredients together in bowl. In small separate bowl mix together remaining ingredients. Pour over vegetables and toss. Cover and refrigerate for 2-3 hours before serving.
2. Eat and enjoy!
