Ham and Cheddar Quiche

Ham and Cheese QuicheQuiche is one of those foods that when I make it I think, Man this is so good, I should make this more often! Actually the whole family really loves eggs in most forms, but Quiche is very high up on the list for all of us. We order it at restaurants, eat it at home, all enjoy it. So why don’t I make it more? Good question, I do also love the variety of my kitchen. Come over for dinner and you never know what you’re going to get! This recipe was so quick to put together, although it does need a long bake time, so plan that when you make your meal plan. I hope you enjoy this recipe as much as we did!

Recipe from Allrecipes

  • 1 pie shell, store bought or homemade
  • 1 cup diced ham
  • 1 cup shredded cheddar cheese
  • 1 tsp dried minced onion
  • 2 eggs
  • 1 cup half-and-half
  • 1/4 tsp salt
  • 1/8 tsp pepper

1. Pre heat oven to 400 degrees. Cover pie shell with tinfoil and cook for 5 minutes. Remove tinfoil and cook additional 5 minutes. Remove from oven.

2. Layer ham, cheese, and onion in pie shell.

3. Whisk eggs in small bowl. Stir in cream and salt and pepper Pour over cheese. Return to oven and bake for 40  minutes. Let sit for 10 minutes before slicing.

4. Eat and enjoy!

Cheesy Saucepan Potatoes and Ham

Cheesy Saucepan Potatoes and HamUsually I just stick to the same title of a recipe when I make it and blog about it. It could be that I am not very creative, or more probably that the title just fits so well so why bother changing it. This title was originally called Cheesy Scalloped Potatoes with Ham, I always picture scalloped potatoes as hot and bubbly after being baked for a long time in the stove. As these babies are cooked on the stove top I have decided to change the name. Something I have also noticed about my self this week, is I don’t really read the directions to recipes when I am making my meal plans , just the ingredients list, so sometimes it is hard to time dinner when you have no idea how long it will take. After a bunch of dinner mishaps this week, I will be reading a recipe straight through from now on!

I found this recipe in another gem of a cook book The Big Book of Weeknight Dinners

  • 2 Tbsp butter
  • 1 clove garlic, minced
  • 2 lb white potatoes, peeled and sliced thin (about 4 medium)
  • 2 cups cooked ham, cut into small cubes
  • 1 cup shredded cheddar cheese
  • 3 Tbsp all-purpose flour
  • 1/4 tsp pepper
  • 2 cups half-and-half

1. Melt butter in large saucepan  and cook garlic 1 minute. Stir in potatoes, ham, cheese, flour, and pepper.

2. Pour in half-and-half and bring to a boil over medium heat. Reduce to a simmer and cook for 30 minutes, stirring occasionally.

3. Eat and enjoy!

Egg Benedict Breakfast Pizza

The finished productOnce a month we have great friends of ours over for brunch. I am always on the hunt for a new brunch recipe. These are the kind of friends I can totally try out new recipes on. So I do, pretty much every time I cook for them. This recipe was a hit, even my husband who is really not a fan of Hollandaise really liked it. Now onto the brunch hunt for next month!

Original Recipe from Allrecipes

  •  12 eggs, well beatenThe lined crust
  •  1 tablespoon butter
  •  2 (8 ounce) cans refrigerated crescent rolls
  •  1 (.9 ounce) package hollandaise sauce mix
  •  Butter called for on Hollandaise package (I used 1/2 cup)
  •  3 cups diced cooked ham
  •  1 cup shredded sharp Cheddar cheese

1. Line crescent rolls on a pizza pan and press seams together. There should be more than enough to cover pan.

2. Make hollandaise sauce according to package directions and pour on top of prepared crescent rolls.

3. Melt butter in large saucepan and cook eggs until desired doneness, stirring to scramble as you cook. Scoop on top of hollandaise.

4. Top with cut up ham and shredded cheese.

5. Bake at 400 degrees for 30 minutes. Slice with pizza cutter.

6. Eat and Enjoy!

 

Ham and Perogy Casserole

dinnermmmmm…..leftover ham. Like turkey I like to save up all those leftovers put them in small portions and throw them in the freezer. This one is a family favorite and eventually shows up on the meal plan sometime after a big ham is cooked.

  • 2 cups chopped leftover ham
  • 1 box (907 g) Cheemo Potato, Bacon and Romano Cheese Perogies
  • 1 can cheese soup (10 ounce)uncooked
  • 1/2 soup can milk
  • 1 tbsp. butter
  • 1 medium onion
  • 1/2 bell pepper of your choice
  • 2 cups frozen vegetables (whatever you have in your freezer, this time I used green beans)
  • 2 cups grated cheddar cheese

1. Pre heat oven to 375 degrees.

2. Melt butter in fry pan and fry onions and peppers until onion is tender.

3. In a greased 13×9 inch pan layer, perogies, ham, frozen vegetables, onion + pepper mix.

4. Mix soup in small bowl with milk. Pour on top of perogy mixture. Top with cheese.

5. Bake for 35 minutes.

6. Eat and Enjoy!
