Belgian Waffles with Berry Cream

WafflesI am not a breakfast eater. For one thing I am just not hungry first thing in the morning, secondly I am usually tired and really don’t feel like cooking up something delicious. So I just pour myself a large glass of chocolate milk and sip away while I check Facebook, write my morning blog post. Then sometimes I am craving breakfast food, so I have to make it for dinner. My breakfast eating family doesn’t mind though as I don’t usually cook them breakfast either, I will just make them toast, cereal or a bowl of porridge. Waffles are a rarity in the morning, but a welcome treat at night.

Waffles

  • 2 eggs
  • 1 cup milk
  • 2 1/3 cups Bisquick
  • 2 tbsp sugar
  • 1/4 cup vegetable oil

Berry Cream

  • 1 cup whipping cream
  • 1/4 cup powdered sugar
  • 2 cups fresh strawberries, sliced
  • 1/2 cup blueberries

1. To make waffles blend together all waffle ingredients.

2. Preheat waffle iron, and cook until done.

3. For Berry Cream- Beat whipping cream and powdered sugar until creamy peaks form. Gently fold in strawberries and blueberries.

4. Serve on top of waffles with additional berries and maple syrup if desired.

5. Eat and enjoy!

 

Cheeseburger Pie

Cheeseburger PieHere is a quick and easy meal. My whole family loved it, and took seconds so that makes it a keeper in our house. Plus , a nice bonus is I usually have all of these ingredients on hand so I can whip it out quite easily if something goes a rye with dinner plans.

  • 1 pound lean (at least 80%) ground beef
  • 1 large onion, chopped
  • 1/2 teaspoon salt
  • 1 cup shredded Cheddar cheese
  • 1/2 cup Original Bisquick® mix
  • 1 cup milk
  • 2 eggs

1. Cook beef, salt and onion together in large skillet, drain off all fat.

2. Place in a greased pie plate, sprinkle with cheese.

3. Mix together the milk, eggs and Bisquick, pour over cheese.

4. Bake in a 400 degree oven for 25 minutes.

5, Eat and Enjoy!

Tips- Serve with a garden salad.

Onion Cheddar Biscuits

BiscuitsThis recipe went along with yesterday’s Taco Pasta Salad when I was not particularly feeling like cooking but wanted a quick throw together dinner. With these we got quick, but we also got yummy homemade biscuit straight from the oven.

  •                     1/2 cup milk
  •                     1 egg
  •                     1 tablespoon butter or margarine, melted
  •                     1 1/2 cups biscuit/baking mix
  •                     3/4 cup shredded Cheddar cheese, divided
  •                     1/2 cup finely chopped onion
  •                     1 tablespoon poppy seeds

1. Mix together egg, milk and butter in small bowl. Mix in remaining ingredients except 1/4 cup cheese and poppy seeds.

2. Scoop batter into 6 greased muffin tins.

3. Top with remaining cheese and poppy seeds.

4.Bake at 400 for 14 minutes.

5. Eat and Enjoy!
