Steak & Mushroom FlorentineDo you have a time of the day that you are most productive? mine is definitely in the morning, the afternoons I like to spend doing quiet things, reading my book, playing a  game with the kids, blogging. So in an effort to give my kids schooling and the house cleaning my most productive hours I am going to try something new out. I am going to start blogging in the afternoon instead of the morning and schedule the posts for the following morning. This way my kids get me at my most attentive time. Plus I can just chillax and write whatever I want instead of rushing through so that I can go home school or clean. Yes it is true here I sit on a Wednesday afternoon, with all my days deeds done. You of course will be reading this on Thursday morning. Ah well, we will give it a go.

We had this recipe for dinner last night and after a really hectic day ( I’m not going to lie, I was pretty grumpy) it was so nice to have an easy meal planned. My husband must have known that I needed a little break as he called me in the late afternoon to inform me that he got a babysitter and was taking me to a movie. Good timing hubs, Good timing!

Recipe from Campbell’s 3 books in 1

  • 2 Tbsp vegetable oil
  • 1 pound beef sirloin  cut into strips
  • 1 small onion sliced
  • 4 cups baby spinach
  • 1 can mushroom soup
  • 1 cup water

1. Heat 1 Tbsp oil in large skillet over medium high heat, cook beef until browned, remove and set aside.

2. Heat remaining oil and cook onion until tender, add spinach and cook until just wilted. Add soup and water, bring to a boil. Add beef. Reduce heat to a gentle simmer and cook until beef is cooked through.

3. Eat and enjoy!

Salisbury Steak

Salisbury SteakComfort food is the best. This one is categorized as Comfort right in the recipe, so I knew it was a must try. Neither of my girls like mushrooms, but I can usually get away with using mushroom soup in recipes and they really like it. In fact one of my older daughter’s favorite meals uses mushroom soup so score for me, I can get my mushroom fix and not have to make a separate meal for the girls.This one was a hit with the whole family.

Recipe found in Southern Liven Homestyle Cookbook

  • 1 can beefy mushroom soup (I couldn’t find this so I used mushroom garlic)
  • 1 1/2 pounds ground beefCookbook
  • 1 large egg, beaten
  • 1/2 cup dry bread crumbs
  • 1/4 cup finely chopped onions
  • 1/8 tsp. pepper
  • 1/4 cup water

1. Mix together 1/4 cup soup, the ground beef,onion, pepper, egg and bread crumbs and form into patties. ( I got six).

2. Heat a large skillet over medium high heat and cook patties for 4 minutes on each side until nicely browned.

3. Combine remaining soup and water and pour over patties, reduce heat to a gentle simmer and cook for 20 minutes, until patties are cooked through.

4. Eat and enjoy!

baconPillsbury cresents are so versatile. I just love to use them for both sweet and savory. Tonight’s dinner was a nice quick and easy meal. Now I am ditching the kids and the hubby for a night out with my best friend and her husband. Just have time to tell you about dinner , and then off to see the final Harry Potter. Kind of sad I will never get to experience it again for the first time.

Bacon Cheeseburger Roll-ups

  • 1 lb. ground beef
  • 4 slices bacon, chopped
  • 1/2 cup chopped onions
  • 2/3 cup cheez whiz
  • 1 pkg.pillsbury cresent rolls

1. Preheat the oven to 400 degrees and grease a cookie sheet.

2. Cook the beef, bacon and onions together in a skillet until beef and bacon are cooked through.

3. Drain beef mixture, add cheez whiz to pot and cook for an additional 5 minutes.

4. Roll out the cresent rolls onto the cookie sheet. Top with beef mixture and roll up. (Long side).

5. Bake for 20 minutes. Slice and enjoy.

supperTips- To give it a mexican twist, you could use Jalepeno cheez whiz and top with sour cream and salsa.
