I made possibly one of my favorite veggie dinners ever, plus it has the added bonus of being super easy and requires absolutely no cooking. I foresee this becoming one of our summer staples, I am already planning to have it again soon because it was just that good! In other news, 2 out of 3 kids, have finished there homeschooling for the year, 1 more to go and then time for our summer vacation! Yay, after all the hard work my kids put in this year, we are ready for a big break!</p>

<ul>
<li>1 store-bought focaccia bread, cut in half horizontally</li>
<li>2 1/2 cups mixed greens</li>
<li>1/2 cup thinly sliced red onion</li>
<li>3 Tbsp. shredded feta cheese</li>
<li>1 Tbsp. each olive oil and lemon juice</li>
<li>1/8 tsp. cayenne pepper</li>
</ul>
<p>1. In mixing bowl toss together all ingredients except bread. Open bread, place salad on bottom half, replace bread lid and cut into sandwich sized serving pieces.</p>
<p>2. Eat and enjoy!</p>

It seems everybody else on this planet is longing for summer, but when summer comes, I miss a few of my favorite things, like homemade baked goods, and sitting by my fireplace, book in hand. These a re the moments that I love. I took full advantage of the lovely weather yesterday and made scones. Scones, tea, book , fireplace, in Jamie vernacular that is a perfect afternoon.</p>
<p>Recipe from <a title="Allrecipes" href="http://allrecipes.com/recipe/blueberry-oatmeal-scones/detail.aspx" target="_blank">Allrecipes</a></p>
<ul>
<li>1 1/2 cups rolled oats</li>
<li>1/2 cup whole wheat flour</li>
<li>1/2 cup all-purpose flour</li>
<li>1/3 cup white sugar</li>
<li>3/4 tsp. baking powder</li>
<li>3/4 tsp. baking soda</li>
<li>6 Tbsp. cold butter cubed</li>
<li>3/4 cup milk</li>
<li>1/2 cup pecans, chopped</li>
<li>1 cup blueberries</li>
<li>2 Tbsp. additional milk</li>
</ul>
<p>1. Mix together first 6 ingredients in medium-sized mixing bowl. Cut in butter until crumbly.</p>
<p>2. Stir in milk, then pecans and blueberries. Stir until just combined.</p>
<p>3. Place dough on a greased cookie sheet and flatten into a large circle (about 1 inch high), then cut into 8 wedges. Brush with remaining milk.</p>
<p>4. Bake at 375 degrees for 20 minutes. Re-cut wedges.</p>
<p>5. Eat and enjoy!</p>

Easy, plus as an extra bonus you really don&#8217;t use that many dishes making it. This particular recipe was very good, I usually make the standard ground beef recipe, this one switched it up a bit, using ground chicken instead. Actually the original recipe called for ground turkey, but while at the store ground chicken was quite a bit cheaper so I decided to go with that. Really you could use any kind of ground meat in this recipe which makes it perfect for a last-minute meal. Ground beef, or pork, or of course the turkey, they would all be good. Chili, so tasty, so versatile, gotta love it!</p>

<ul>
<li>1 tbsp. vegetable oil</li>
<li>1 onion, chopped</li>
<li>2 cloves garlic, minced</li>
<li>1 pound ground chicken (or turkey)</li>
<li>2 Tbsp. chili powder</li>
<li>2 tsp. ground cumin</li>
<li>3 Tbsp. tomato paste</li>
<li>1 (28 ounce) can diced tomatoes</li>
<li>1 can red kidney beans</li>
<li>1 cup chicken broth</li>
<li>1 cup beer</li>
<li>1 tsp salt</li>
<li>1/2 tsp pepper</li>
<li>1/4 cup chopped fresh cilantro ( I did not use this, as my family does not like it)</li>
</ul>
<p>1. Heat oil in large pot. cook onion for 5 minutes over medium heat. Add garlic cook 1 more minute. Add meat of your choice, chili powder and cumin. Stir and cook until meat has cooked through. Stir in tomato paste and cook for about 2 minutes. Add remaining ingredients.</p>
<p>2. Bring to a boil. Reduce heat to a simmer, and cover cooking for 30 minutes.</p>
<p>3. Eat and enjoy!</p>

It&#8217;s the third Monday of the month. Do you all know what that means? Have you all been paying attention? Well, it is time for <a title="The Secret Recipe Club" href="http://secretrecipeclub.com/" target="_blank">The Secret Recipe Club</a> of course! This month&#8217;s post is brought to you by the lovely blog <a title="365 Days of Baking" href="http://www.365daysofbaking.blogspot.ca/" target="_blank">365 Days of Baking</a>. Now when you read the title you assume it will all be baked goods. Nope, Lynne has plenty of savory recipes too, quite a wide variety of everything in fact. This proved to make the decision-making process quite difficult. I think I pinned more recipes than ever before! After many days pondering the choices I decided to go with the <a title="Pineapple Bread" href="http://365daysofbaking.blogspot.ca/2011/11/day-259-pineapple-bread.html" target="_blank">Pineapple Bread</a>. Both my daughter and I love pineapple, and I was craving some good baking so the choice was made. It was delicious, however I will admit the pan I cooked it in was too small, which made a mess in my oven. I was a little worried, to say the least. We were able to fix the problem though, I cut off the cooked ends and then put the middle back in the oven. I have adjusted the recipe below to cook in 2 pans instead of one, which is what I will do next time. Thanks, Lynne for all the yummy recipes, I will surely be coming back for more!</p>
<p>1/2 cup (1 stick) unsalted butter, room temperature<br />
1 cup sugar<br />
1 1/2 cups all-purpose flour<br />
1/2 teaspoon baking soda<br />
1/2 teaspoon salt<br />
3 eggs<br />
1 cup Greek yogurt<br />
1 20 oz. can pineapple tidbits<br />
1/2 cup unsweetened coconut, toasted</p>
<p>1. Cream together butter with sugar until creamy. Add eggs one at a time and blend in.</p>
<p>2. Beat in 1/2 cup of flour with baking soda and salt. Then 1/2 cup yogurt, 1/2 cup flour, 1/2 cup yogurt, and last cup flour. It&#8217;s a rhythm you see.</p>
<p>3. Fold in pineapple</p>
<p>4. Spread into 2 greased loaf pans that have been greased and floured. Smooth down top with spatula. Top with coconut.</p>
<p>5. Bake for 30 minutes, in a 350 degree oven. top with tin-foil and cook an additional 30 minutes. Test with toothpick to make sure middle has cooked.</p>
<p>6. Cool, slice.</p>
<p>7. Eat and enjoy!</p>

I decided to try out a recipe with homemade caramel instead of just melting the little Kraft ones. So as I was enjoying some quiet time with my girls at Chapters I started looking through the <a title="Taste of Home Kid Approved Cookbook" href="http://www.amazon.com/Taste-Home-Kid-Approved-Cookbook-Family/dp/0898219116/ref=sr_1_1?ie=UTF8&amp;qid=1368716911&amp;sr=8-1&amp;keywords=Taste+of+Home+Kids" target="_blank">Taste of Home Kid Approved Cookbook</a> and found the perfect recipe. In fact, there were so many recipes I wanted to try from said cookbook that I just bought it. Splurge time! Am I ever glad I did! I have enjoyed looking through it many times since, and let me just tell you the caramel recipe on these apples is amazing. And, really not that hard either!</p>
<ul>
<li>1/2 cup butter, cubed</li>
<li>2 cups packed brown sugar</li>
<li>1 cup corn syrup</li>
<li>dash salt</li>
<li>1 can (14 ounces) sweetened condensed milk</li>
<li>1 tsp vanilla extract</li>
<li>12 popsicle sticks</li>
<li>12 medium-sized apples</li>
<li>1 cup salted peanuts, chopped</li>
</ul>
<p>1. Melt butter in large saucepan. Add brown sugar, corn syrup and salt, stir. Bring to a boil over medium heat, stirring occasionally. Add sweetened condensed milk.</p>
<p>2. Use your candy thermometer and cook until mixture reaches 248 degrees (firm-ball stage).</p>
<p>3. Jam popsicle sticks into tops of apples and dip apples in caramel sauce. Twirl around a bit so the excess drips off, and immediately dip bottoms in peanuts. Place on cookie sheet that has been lined with wax paper.</p>
<p>4. Let cool, eat and enjoy!</p>

I was intrigued, plus I had both Mozzarella and Cheddar in my house which is rare, as I usually only have one or the other. So we tried it, we loved it. The only thing I would say is it needed some extra salt and pepper. I did modify the recipe a bit to use what I had and added a few extra bits, changed bacon to bacon bits for less work, but it all worked out really good. I think I will definitely make this again, and it is a huge recipe so there would be plenty if you need a potluck dish, or a dish to serve company. Original recipe from <a title="Allrecipes" href="http://allrecipes.com/recipe/broccoli-mac-and-cheese-with-bacon-and-potato-nugget-topping/detail.aspx" target="_blank">Allrecipes</a> although I did make changes.</p>
<ul>
<li>450 grams macaroni (8 ounces)</li>
<li>2 cups each, cheddar and mozzarella</li>
<li>3/4 cup real bacon bits</li>
<li>3 eggs</li>
<li>2 cups milk</li>
<li>1/4 tsp Cajun seasonings- I would increase this to a full tsp next time</li>
<li>salt and pepper- don&#8217;t be shy</li>
<li>1 head broccoli, cut into small florets</li>
<li>1 small onion, chopped</li>
<li>2 tsp butter</li>
<li>30 frozen tater tots</li>
</ul>
<p>1. Cook macaroni in salted water until tender but still firm. Drain and pour into a large casserole dish that has been greased.</p>
<p>2. Melt 1 tsp of the butter in skillet, and sauté the broccoli and onion until onion is tender, about 5 minutes.</p>
<p>3. While veggies are cooking, crack eggs into large mixing bowl. Whisk with milk, remaining 1 tsp butter and seasonings. Stir in 1 cup of each cheese,10 tater tots,  and vegetables, when they are finished. Pour this mixture on top of macaroni and mix well.</p>
<p>4. Top with remaining 1 cup of each cheese, and top the cheese with the bacon bits. Scatter remaining 20 tater tots on top. Cover.</p>
<p>5. Bake for 45 minutes at 350 degrees.</p>
<p>6. Eat and enjoy!</p>

So we headed out to CrossIron Mills, or super big mall just outside city limits. Our first stop was Nathan&#8217;s Hot Dogs, because as we don&#8217;t have one in the city, we have never tried it before. It was pretty good. It is a smaller shop than I was expecting, so it actually doesn&#8217;t have the full menu that is on the website, but we all enjoyed our Hot Dogs and fries. The picture above is my son&#8217;s cowboy Hot Dog and Bacon Ranch fries, both of which were the best things that were ordered. The homemade Orangeade was really good too making me wish I had ordered the homemade lemonade instead of pop. All in all, it was as lovely lunch, and we will be trying out the Airdrie location sometime, with the full menu. Definitely worth the stop in Crossiron mills, though. Oh, and I did find a dress, so that was a bonus too!<br />

This is a mighty job, that will hopefully include many filled garbage bags by the end of the day. Lots to move, lots to clean. Luckily it&#8217;s Friday which means frozen pizza night, so not much happening in the kitchen. It was my plan to clean each of the kids rooms really good this spring, possibly talk them into getting rid of some of their beloved stuffies as they are growing up, and probably no longer need the 100 + that are in each of their rooms. Okay 100+ is an exaggeration, but it sure seems like it. Now on to bread, I told you all about my love affair with bread yesterday, so no need to go into it further, I&#8217;ll just give you another great recipe I made this week, then we can all enjoy the bread together! Sound good?</p>

<ul>
<li>1 cup water</li>
<li>2 1/2 cups bread flour</li>
<li>1 Tbsp white sugar</li>
<li>1 tsp salt</li>
<li>1 1/2 tsp bread machine yeast</li>
<li>1 egg yolk</li>
<li>1 Tbsp water</li>
</ul>
<p>1. Add water, flour, sugar, salt, and yeast to bread machine in that order. Choose dough cycle.</p>
<p>2. When dough is done ( mine takes 2 hours) remove from bread machine and place in greased bowl. Flip so both sides of the dough have been greased. Cover with a tea towel and let rise in a warm place for 30 minutes.</p>
<p>3. Punch down dough and turn out onto a floured surface. Roll into a 16&#215;12 inch rectangle cut into two, making two 8&#215;12 rectangles. Roll each dough half up into a log and pinch the edges together. Use your hands roll it around so the crease blends into the dough. Cut large diagonal slashes down the top of the loaf. Repeat with remaining half, and place dough on greased baking sheet. Again cover with tea towel and let rise in warm spot for 30 minutes.</p>
<p>4. Mix together egg yolk and water, and brush on to dough. Bake for 25 minutes in 375 degree oven.</p>
<p>5. Eat and enjoy!</p>

That person filling up on the bread at a restaurant before the meal comes, that is me. The girl ordering a sandwich at a steak place, yup , that&#8217;s me too. Suffice it to say, I use my bread maker quite a bit. I tried out this new recipe last night to go with our Shrimp and Rice and it was so good. There just happens to be one small piece left over, probably won&#8217;t be lasting much longer. Yup, that&#8217;s right we ate the whole loaf, although we did have help, it wasn&#8217;t just the 5 of us. Plus as an extra bonus, this bread will make your house smell better than it ever has before. Make it, you&#8217;ll be glad you did!</p>

<ul>
<li>1 cup water</li>
<li>1 Tbsp butter</li>
<li>2 Tbsp honey</li>
<li>2 1/2 cups all-purpose flour</li>
<li>1/3 cup oats</li>
<li>3/4 tsp salt</li>
<li>1/2 tsp cinnamon</li>
<li>1 3/4 tsp bread machine yeast</li>
<li>1 cup craisins</li>
</ul>
<p>1. Add liquid ingredients, followed by dry, and top with yeast to bread machine. Don&#8217;t add the craisins yet. Press start.</p>
<p>2. When your bread machine beeps for your add-ins, add in craisins.</p>
<p>3. Remove bread carefully when finished baking, slice. Top with butter if desired.</p>
<p>4. Eat and enjoy!</p>

Soft, chewy, chocolaty, everything you want in a cookie. While over at <a title="Sally's Baking Addiction" href="http://sallysbakingaddiction.com/" target="_blank">Sally&#8217;s Baking Addiction</a> I also pinned a kajillion other recipes, like every single one on her site, okay not everyone, because that would just be crazy, but let me tell you this is a blog you want to check out, every single post will have you drooling at your computer chair. <ul>
<li>1/2 cup unsalted butter- softened</li>
<li>3/4 cup brown sugar</li>
<li>1/2 cup white sugar</li>
<li>1 egg</li>
<li>1 egg yolk</li>
<li>1 tsp vanilla</li>
<li>3/4 tsp baking soda</li>
<li>1 tsp baking powder</li>
<li>1 tsp salt</li>
<li>2 1/4 cups all-purpose flour</li>
<li>2 tsp cocoa powder</li>
<li>1/4 cup milk</li>
<li>1 package Andes Crème de Menthe baking chips</li>
</ul>
<p>1. Beat together butter and both sugars until creamy. Add egg, egg yolk, and vanilla. Beat until combined at least one minute.</p>
<p>2. Beat in baking soda, baking powder, salt, cocoa powder and 1 1/4 cups of the flour. Beat in last cup of flour with milk.</p>
<p>3. Beat in baking chips, you may have to stir in with your hands to totally combine them.</p>
<p>4. Place a rounded Tablespoon of dough on baking sheet and continue with remaining dough. Bake cookies for 10 minutes at 350 degrees. Remove from cookie tray and cool.</p>
<p>5. Eat and enjoy!<br />
