Belgian Waffles with Berry Cream

WafflesI am not a breakfast eater. For one thing I am just not hungry first thing in the morning, secondly I am usually tired and really don’t feel like cooking up something delicious. So I just pour myself a large glass of chocolate milk and sip away while I check Facebook, write my morning blog post. Then sometimes I am craving breakfast food, so I have to make it for dinner. My breakfast eating family doesn’t mind though as I don’t usually cook them breakfast either, I will just make them toast, cereal or a bowl of porridge. Waffles are a rarity in the morning, but a welcome treat at night.

Waffles

  • 2 eggs
  • 1 cup milk
  • 2 1/3 cups Bisquick
  • 2 tbsp sugar
  • 1/4 cup vegetable oil

Berry Cream

  • 1 cup whipping cream
  • 1/4 cup powdered sugar
  • 2 cups fresh strawberries, sliced
  • 1/2 cup blueberries

1. To make waffles blend together all waffle ingredients.

2. Preheat waffle iron, and cook until done.

3. For Berry Cream- Beat whipping cream and powdered sugar until creamy peaks form. Gently fold in strawberries and blueberries.

4. Serve on top of waffles with additional berries and maple syrup if desired.

5. Eat and enjoy!

 

Pumpkin Pancakes

Pumpkin PancakesStill on my little spring pancake kick. This recipe worked perfect with the Pumpkin Muffin Tops I made earlier in the week, because I had 1/2 cup of pumpkin leftover from the can. These pancakes were delicious, I will be making this recipe again for sure!

Recipe from Southern Living Complete Quick & Easy Cookbook

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 Tbsp. Sugar
  • 1/2 tp pumpkin pie spice
  • 2 large eggs, separated
  • 3/4 cup milk
  • 1/2 cup canned pumpkin
  • 1/4 cup melted butter

1. Separate eggs, and beat whites until stiff peak forms.

2. Mix yolks together with milk, pumpkin and butter.

3. In mixing bowl combine first 5 ingredients, make a well in center and pour in milk mixture. Stir until just combined. Fold in egg whites.

4. Cook on lightly greased griddle until bubbles form, flip and cook through. Serve with syrup.

5. Eat and enjoy!

Buttermilk Pancakes

Breakfast for dinnerAlright a few things about this pancake recipe 1. These are probably going to be the best pancakes you have ever eaten 2. This pancake recipe takes a bit more work than the usual pancake recipe with the beating of the egg whites, folding them in and whatnot 3. This recipe is large, it fed my family of 5 two meals 4. I have learnt through my kitchen adventures that pretty much anything that calls for buttermilk as one of the ingredients is going to turn into a family favorite. So with all that being said here is the recipe that I got in the cook book Company’s Coming Cooking at Home.

  • 3 cups all-purpose flourready to flip
  • 2 tbsp. sugar
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 6 (large) egg yolks
  • 3 1/3 cups buttermilk
  • 6 tbsp. melted butter or margarine
  • 6 (large) egg whites
  • Oil for pan
  • Syrup

1. Mix dry ingredients in large bowl, make a well.

2. Beat together the egg yolks, melted butter and buttermilk. Pour into well and gently stir until just mixed.

3. Beat the egg whites until stiff peaks form and gently fold into pancake mixture.

4. Heat oil in large fry pan and scoop in about 1/4 cup of batter. When bubbles form flip until second side is lightly browned.

5. Serve with syrup.

6. Eat and enjoy!

Fluffy Pancakes

BreakfastThere isn’t many breakfasts that can beat a good old-fashioned pancake. Syrup dripping off your fork as you slowly reach towards your mouth. Breakfast sausage on the side. Am I making you hungry. This recipe is a great basic and uses ingredients most people have on hand! Original recipe from Allrecipes.

  •  3/4 cup milkfluffy batter
  •  2 tablespoons white vinegar
  •  1 cup all-purpose flour
  •  2 tablespoons white sugar
  •  1 teaspoon baking powder
  •  1/2 teaspoon baking soda
  •  1/2 teaspoon salt
  •  1 egg
  • 2 tablespoons butter, melted
  •  cooking spray

1. Mix together milk and vinegar in large bowl and set aside for 5 minutes until thickened.

2.Add flour , sugar, baking powder, baking soda, salt , egg and melted butter. Stir until combined.

3. Heat griddle to medium-high heat and spray with cooking spray.

4. Spread batter out onto griddle, you may need to use a knife to flatten slightly do the middle cooks. Flip when bubbles form. Cook until second side is browned.

5. Eat and Enjoy!
