Strawberry Kiwi Smoothies

Yes, that is right, we have all searched the blog world to find what we think is the perfect smoothie recipe. Well, let me tell you there is a lot of smoothie recipes out there! I decided to try this one out that I found at Skinny Taste , exactly what I was looking for, I doubled the recipe so that there would be enough for myself and my three children. It yielded 4 large smoothies! Thank you Skinny Taste for a fabulous recipe!

  • 2 individual sized strawberry fiber one yogurt
  • 12 strawberries
  • 2 kiwi, peeled
  • 2 cup ice

1. Put all ingredients in blender and puree.

2. Drink and enjoy!

Caramelized Apple Grilled Cheese

Apple Cheese SandwichIt is time for another Crazy Cooking Challenge and this month it is Grilled Cheese Sandwiches!

We usually have the standard Kraft singles grilled cheese served with Campbell’s tomato soup. A combo that just can’t be beat! However, now that I have found this gem of a recipe from a wonderful blog Closet Cooking I may have to change my tune. I didn’t really realize that there were so many grilled cheese options out there, sure I like to melt a little smoked gouda once in a while, occasionally I have dabbled in havarti with jalapeno, however Kevin really has mastered the grilled cheese! Go check out his site for oodles of grilled cheese (and other) amazing recipes! Here is the one I chose because it just looked plain delicious!

  • 1 tablespoon butter
  •  1 tablespoon brown sugar
  •  1 dash of cinnamon
  •  1 apple (peeled, cored and sliced)
  • 2 thick slices of good cheddar cheese
  •  2 slices of good bread
  •  1 tablespoon butter

1. In small skillet melt butter and add brown sugar and cinnamon. Cook until brown and bubbly. Add apples and cook for about 5 minutes.

2. Spread each bread slice with 1/2 Tbsp of butter, assemble sandwich butter side down on skillet, top with one slice cheese, apple mixture, second slice cheese, and bread with butter on outside.

3. Cook over medium heat, flip when first side is golden brown, continue cooking until second side is golden brown.

4. Eat and enjoy!

Coconut Topped Blueberry Muffins

Breakfast of ChampionsTime for The Crazy Cooking Challenge ! And it is none other than my very favorite food, Blueberry muffins. What a fun challenge, to find somebody else’s great version and make it! I found this Coconut Topped blueberry Muffin recipe over the very adorable blog Yammie’s Noshery. I can honestly say I have never thought of just scooping coconut on top but as soon as I saw the pictures I knew this was the muffin I would be making. It is the perfect blueberry muffin recipe. Go ahead and give it a try!

  • 1/2 cup sour cream
  •  1/4 cup softened butter
  •  2 cups flour
  •  1 1/2 teaspoons baking powder
  •  1/2 teaspoon salt
  •  1 egg
  •  1/2 cup milk
  •  1/4 cup olive oil
  •  1 cup sugar
  •  1 cup blueberries
  • 12 Tbsp coconut

1. Beat together the sour cream and butter. Beat in flour, baking powder, and salt.

2. In separate bowl mix together the egg, milk, oil and sugar. mix into flour mixture. Fold in blueberries.

3. Scoop into a greased muffin tin, and top each muffin with 1 Tbsp of coconut.

4. Bake for 25 minutes and 375 degrees.

5. Eat and enjoy!

Baked Cream Cheese Spaghetti

Spaghetti goodnessI was overjoyed when I found out this month’s Crazy Cooking Challenge was spaghetti. My family loves spaghetti in all forms. I have been drooling over all of the recipes over at Plain Chicken for awhile now and so I finally got to make one. I thought this Baked Cream Cheese Spaghetti Casserole was just perfect for the challenge. I didn’t have to change a thing, just made it exactly as recipe stated. Thank you Steph for the wonderful recipe, I will be back for more, for sure! So if you are looking for a perfect, delicious and easy recipe to add to your dinner rotation look no further!

  • 12 oz spaghetti
  •  1 (28 ounce) jars prepared spaghetti sauce
  •  1 lb lean ground beef
  •  1 tsp Italian seasoning
  •  1 clove garlic, minced
  •  8 ounces cream cheese
  •  1/2 cup parmesan cheese, grated

1. Cook spaghetti according to package directions, or to your liking. Drain.

2. While the noodles are cooking brown your ground beef in a large skillet. Add spaghetti sauce and simmer for a bit to blend flavors. Set aside.

3. Cut up cream cheese and place in a mixing bowl with the italian seasonings and garlic. Throw in the cooked spaghetti noodles and toss to coat until all the cream cheese is melted and the noodles are evenly coated.

4. Place about 1/2 cup of sauce in a greased 13×9 pan. Top with noodle mixture, then remaining sauce. Sprinkle with parmesan cheese.

5. Bake in a 350 degree oven for 30 minutes.

6. Eat and Enjoy!
