The BEST Turkey Stuffing

Turkey StuffingWhen Tina over at Mom’s Crazy Cooking announced that this month’s Crazy Cooking Challenge was going to be Stuffing, I scoured the internet and my cookbooks trying to find that oh so perfect stuffing recipe. Then I realized I already have it and have been making it for 14 years of married life. Turkey, Gravy, Stuffing, the one meal my husband has asked me not to mess around with. He likes it just as is. And so here it is, the Best , you will never want to stuff your turkey with anything but this, stuffing recipe. On a side note, I have no idea where this recipe originally came from so if it’s yours thanks for the awesomeness of it!

  • 1 loaf of white bread , toasted and cut into cubes
  • 3/4 cup butter
  • 1 onion, chopped
  • 4 stalks celery, chopped
  • 2 tsp poultry seasonings
  • salt and pepper to taste
  • 1 cup chicken broth

1. Melt butter in large skillet, cook onions and celery 10 minutes. Add seasonings stirring to coat. Add toasted bread cubes, again stir to coat. Stir in chicken broth.

2. Stuff into cavity of turkey and cook turkey for 15 minutes per pound at 350 degrees.

3. Remove stuffing from turkey and serve.

4. Eat and enjoy!

Candy Apple Pie

Candy Apple PieThis month’s Crazy Cooking Challenge is brought to you by the letter A. A for Apple pie. I used to not really like apple pie, or in fact I have always liked it, however I usually prefer my desserts with plenty of chocolate. I think my palate may be stretching because I quite enjoy a large variety of desserts, and a lot of them have no chocolate to speak of. I highly enjoyed this version of apple pie with a delicious caramel nut topping. Sweetness is still a must if I am going to have a dessert. So I hope you make this delicious fall themed pie.

Recipe from Taste of Home Grandma’s Favorites

  • 6 cups thinly sliced peeled tart apples
  • 2 Tbsp lime juice
  • 3/4 cup sugar
  • 1/4 cup flour
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • pastry for double crust pie- store-bought or homemade
  • 2 Tbsp butter
  • TOPPING:
  • 1/4 cup butter
  • 1/2 cup packed brown sugar
  • 2 Tbsp heavy whipping cream
  • 1/2 cup chopped pecans ( I used walnuts)

1. Line pie plate with bottom pastry.

2. Mix together the apples, lime juice, sugar, flour,cinnamon and salt. Pour into pastry lined pie plate. Dot with the 2 Tbsp butter.

3. Lay second pie crust on top of apples and seal edges. Cut a few lines so steam can escape.

4. Bake for 40 minutes at 400 degrees.

5. When pie is almost finished start topping. Melt butter in small saucepan. Stir in sugar and cream and bring to a boil. Remove from heat and stir in nuts. Pour on top of cooked pie. Return to oven cook additional 4 minutes.

6. Serve warm, delicious with ice cream.

Mini Red Velvet Cheesecakes

Mini Red Velvet CheesecakesHere is a funny little thing about our family. I don’t like cheesecake, I know strange to hear a woman say this. My husband is not much of a dessert lover, there are few things in the dessert category that he really loves. However, cheesecake is one of those things. As this month’s Crazy Cooking Challenge is Cheesecake my hubby got to have this treat that I very rarely make. The rules have changed a bit. We used to have to find the recipe on another blog however, now we can find it any ol place we like. Now the options really are endless. I chose to make these cute little mini red velvet cheesecakes from Betty Crocker .

As I didn’t have one, again me no likey the cheesecake, I will just have to tell you what everyone else said. They were a hit! Apparently quite rich, so you probably won’t need moire than one and the real beauty of the recipe is you can freeze them for up to 5 months! Hello Christmas Baking!

I hope you enjoy these tasty little morsels!

  • 1 1/4  cups Oreo crumbs
  • 3 tbsp butter melted
  • 20 ounces cream cheese ( 2 1/2 8 ounce packages)
  • 1 cup granulated sugar
  • 1/4 cup cocoa
  • 2 Tbsp red food coloring
  • 2 tsp vanilla
  • 3 eggs
  • 1/2 cup whipping cream
  • 1 Tbsp icing sugar
  • chocolate flakes for garnish

1. Line 16 regular sized muffin cups with liners. Mix together the Oreo crumbs and butter and press into bottom of cups to form crust.

2. Beat the cream cheese and sugar together. Add cocoa, vanilla and red food coloring. Beat in eggs.

3. Scoop cream cheese mixture into crust lined tins. ( they will be pretty full).

4. Bake at 350 degrees for 25 minutes. Remove from oven and cool for 1 hour. Cool an additional hour in the refrigerator.

5. Beat together the whipping cream and 1 Tbsp icing sugar until stiff peaks form. Scoop onto cheesecakes. Top with chocolate flakes.

6. Eat and Enjoy!

Double Crusted Fried Chicken Breasts

Honey Garlic ChickenThe Crazy Cooking Challenge is here again. It is amazing how fast these months are flying by. It seems like I just posted my Strawberry Kiwi Smoothie recipe from last month. This month our mission was to find the best fried chicken recipe, and I must say we have a winner here! I found this recipe over at a Newfoundland food blog Rock Recipes. I was overjoyed to have found a Newfoundland food blog, as I am half Newfie (my Dad was born and raised) and proud of it! We went to Newfoundland about 6 years ago and it was such a beautiful place! This recipe sounded just perfect for my family, I served it up to rave reviews, the whole family tucked in, and enjoyed it immensely!

  • 4 boneless skinless chicken breasts, pounded thin
  • oil for frying
  •  2 cup flour
  •  4 tsp salt
  •  4 tsp black pepper
  •  3 tbsp ground ginger
  •  2 tbsp ground nutmeg
  •  2 tsp ground thyme
  •  2 tsp ground sage
  •  2 tbsp paprika
  •  1 tsp cayenne pepper
  • 4 eggs
  • 8 Tbsp water

For the Sauce:

  • 2 tsp olive oil
  • 3-4 garlic cloves
  • 1 cup honey
  • ¼ cup soya sauce
  • 1 tsp ground black pepper

1. Make an egg wash by beating together the 4 eggs and 8 Tbsp of water.

2. In separate bowl mix together the flour and all of the seasonings.

3. Dip chicken breasts first in the flour mixture, then egg wash, then again in the flour mixture. Use hands to really rub the flour onto the chicken breasts.

4. Heat oil (you want about 1/2 an inch) in large skillet. Reduce heat to a little less than medium heat, and add chicken breasts. Fry for 5 minutes on each side.

5. To make sauce, heat oil in small sauce pan and saute garlic until brown and fragrant, add remaining sauce ingredients, bring to a boil, reduce heat and simmer for 10 minutes.

6. Slice chicken breasts and serve covered with honey garlic sauce.

7. Eat and enjoy!

Tips- The sauce tastes excellent on rice!
