Almond Joy Cupcakes

IMG_8125Hello all, and welcome to Cupcake Day! I found a little group on Facebook that decided to celebrate the upcoming Christmas season with cake. Little cute cupcakes. Well, I love cake. I love Christmas. I am in. So I made these tender and delicious Almond Joy cupcakes. They were quite tasty indeed. Modeled after one of my favorite chocolate bars. One of the chocolate bars that the kids find me stealing from their Halloween sacks. Plus, the bonus, that I had both the pudding and the icing in my pantry, gifts from my parents. So we were all set to go. Yum!

  • 1 box Devil’s food cake mix
  • 1 Box Almond Joy pudding
  • 1 cup sour cream
  • 1 cup vegetable oil
  • 4 eggs
  • 1 tsp. coconut extract
  • 1 tsp. vanilla extract
  • 1/2 cup brewed coffee
  • 1 jar almond joy frosting
  • 3/4 cup coconut, toasted
  • 24 almonds
  • 24 paper muffin liners

1. Line muffin tins with paper liners.

2. Mix together cake mix and pudding mix. Beat in next 6 ingredients. Scoop into muffin tins.

3. Bake for 22 minutes at 350 degrees. Use toothpick to insure they have been baked through to the middle.

4. Cool. Frost with icing. Roll edges in coconut, and place an almond on each cupcake in the middle.

5. Eat and enjoy!
