Swedish Meatloaf

Swedish MeatloafHere is a recipe I made weeks and weeks ago. It is really good too. Plus, I like the picture. So I am not quite sure why it has taken me so long to post the recipe for all of you. I loved the saltiness that the pork added to the meat mixture. plus, all of the whole family enjoyed this hearty and delicious dinner.

Recipe from Full Bellies Happy Kids

1 Jumbo egg
1/4 cup heavy cream
1 large slice bread torn into 1-inch pieces
1 lb. ground pork
1 lb. ground beef
1 medium onion, chopped small
1/8 teaspoon nutmeg
1/8 teaspoon ground allspice
1/8 teaspoon pepper
1 teaspoon brown sugar
1 1/2 teaspoons salt

1 tablespoon butter
1 tablespoon all-purpose flour
1 1/2 cups chicken broth
1 tablespoon packed brown sugar
1/2 cup heavy cream
2 teaspoons lemon juice
salt & pepper

1. Mash together first list of ingredients with fork. Press into two greased standard sized loaf pans. Bake for 60 minutes at 350 degrees. Drain with large slotted spatula, press entire meatloaf and tip sideways to drain of fat.

2. During last 15 minutes of cook time prepare sauce. Melt butter in medium-sized saucepan. Add flour. Cook for 1 minute. Slowly add chicken broth. Cook for about 2 minutes to allow to thicken. Whisk in brown sugar. Cook for about 4 minutes. Add cream. cook until heated through, Add lemon juice, salt and pepper to taste. Remove from heat and serve over meatloaf.

3. Eat and enjoy!
