Chickpea Fritters with Yogurt Mint Sauce

Chickpea FrittersDo you have a stand mixer at home, just waiting to be used. When I got mine I thought that I would use it all the time. However, I tend to use my hand mixer more, maybe just because I know how to use it, and it is just as easy. Besides making my whipped cream, I was never really sure what to do with my stand mixer. Until, I received The Mixer Bible that is, which really is very informative on what your stand mixer can so. Plus it has loads of recipes that I would love to try out. We all loved these chickpea fritters and even the kids think I should make them again. Easy, moist and one delicious vegetarian supper.

  • Yogurt Mint Sauce:
  • 1 cup plain yogurt
  • 1/4 cup chopped mint
  • 2 Tbsp. lemon juice
  • 1/4 tsp. salt
  • pinch cayenne pepper
  • Chickpea Fritters:
  • 1/4 cup bulgur
  • 1/2 cup boiling water
  • 4 cups chickpeas, drained and rinsed
  • 1 egg
  • 1/2 cup finely chopped onion
  • 1/4 cup each chopped, parsley and cilantro
  • 2 Tbsp. minced garlic
  • 1 Tbsp. lemon juice
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander
  • 1 tsp. salt
  • pinch cayenne pepper
  • vegetable oil

1. Stir together mint sauce ingredients in small bowl. Place in fridge until ready to use.

2. Place bulgur in stand mixer bowl. Top with boiling water. Let sit for 30 minutes. Add all remaining ingredients, except vegetable oil, and set your stand mixer to speed 2, use your flat beater. Mix until chickpeas are all smashed and has become a thick paste.

3. Heat some vegetable oil in large skillet. Use about 1/4 cup of chickpea mixture to form a patties, you will get about 8. Fry patties in hot oil about 3 minutes on each side.

4. Top with yogurt mint sauce, eat and enjoy.

Tips – We served with pita and garden salad for a complete vegetarian meal. This could also be an appetizer if served alone.
