Baked Long Johns

Long JohnsBrrr…It’s cold outside. This means long hours spent by the fire and baking. I have been thinking it is time to start the Christmas baking and start stock piling that freezer, however it hasn’t quite happened. Although I was looking at lots of cookie recipes this week, I ended up making Donuts. Muffiny Donuts. I got to use my little loaf pans which don’t get to see much use in the kitchen, so that was a bonus!

Recipe from taste of home Home Style Cooking

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsps. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. ground cinnamon
  • 2 eggs
  • 3/4 cup milk
  • 1 tbsp. butter, melted
  • 1 tsp. vanilla extract
  • Glaze:
  • 3/4 cup chocolate chips
  • 1 Tbsp. butter
  • 4 1/2 tsp. milk

1. Combine first 5 ingredients in mixing bowl. In separate small bowl whisk together eggs, milk, melted butter and vanilla. Slowly add this mixture to the flour mixture and stir until just combined.

2. Grease 8 4 1/2 inch x 2 1/2 inch loaf pans. Scoop batter evenly among cups. Bake for 20 minutes at 325 degrees. Remove from pan and cool completely.

3. Make glaze by melting together the chocolate and butter. Stir in milk. Dip tops of long john’s in glaze mixture. Let cool until chocolate has set.

4. Eat and enjoy!
