Pumpkin Shortbread BarsWhen I told my husband what was on the list for this weeks baking, he wasn’t that thrilled. You see, my husband and I are polar opposites when it comes to deciding what make a great dessert. Anything with pumpkin in the title I know I am going to love, and probably order if it’s on a desert menu. Anything with pumpkin in the title my husband probably won’t even try. Oh well, all the more for me! I still make lots of pumpkin and who are we kidding, I don’t even wait for fall, I make it year round! Half of the recipe was eaten and the other half was put in the freezer for Christmas, yes the Christmas baking has officially begun! So for all of you pumpkin lovers out there, enjoy this recipe!

  • 1/2 cup softened butter
  • 1/3 cup white sugar
  • 1/4 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 1 cup firmly packed brown sugar
  • 1 cup pureed pumpkin
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup white sugar
  • 1/4 cup cold butter

1. Beat together first four ingredients and press on to the bottom of a 13×9 inch baking dish. Bake for 10 minutes at 400 degrees. Remove from oven. Reduce oven temperature to 350 degrees.

2.Beat together next seven ingredients. Pour on to crust.

3. Mix remaining flour and sugar. Cut in butter until crumbly. Sprinkle on pumpkin mixture.

4. Bake for 30 minutes. Cool completely, and cut into bars.

5. Eat and enjoy!
