Well today is the epic day, my oldest starts Junior High. We home school, as if you have already read this blog you know, which gives us a lot a leeway for when we actually choose to start school. We always start in August because we like to take off a full month in December (yay christmas!), actually we are starting later than usual this year. I have decided to start my son a full week earlier than the girls to try to get the hang of all the changes of Junior high. Erik is super excited to start, having a first-born that absolutely loves school sure helps to get me motivated as well. Hoping our day goes well! In the meantime here is a delicious muffin recipe for you all!

- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 1/2 cups wheat bran
- 1/2 teaspoon salt
- 1 1/4 teaspoons baking soda
- 6 tablespoons molasses
- 2 cups buttermilk
- 1 egg, beaten
- 3 tablespoons butter, melted
1. Mix together dry ingredients. Add molasses, egg, buttermilk. Mix until combined, stir in melted butter. Don’t over mix.
2. Scoop batter into 24 greased muffin tins. Bake at 350 for 20 minutes.
