Last night was my weekly vegetarian/chatfest/movie night with my best friend. I do love my Thursdays. We watched While you were sleeping the Sandra Bullock classic that conveniently takes place between Christmas and New Year’s. It is one of my very favorites. For dinner we had this lovely lemon linguine, which had quite a strong lemon flavor, I might tone it down a bit next time. Served with bread and brushettta it made a lovely meal. It would also be a very nice side dish with Chicken or Steak, if that is more to your liking.
Original Recipe from Company’s Coming Cooking at Home
- 1 lb. linguine pasta
- 16 cups boiling water
- 1 crushed garlic clove
- 1/3 cup butter
- 1 tbsp. lemon zest
- 1/4 cup lemon juice
- 1/2 tsp salt
- 1 tsp pepper
- 1/3 cup fresh sweet basil-chopped
- 1/2 cup freshly grated parmesan cheese
- 6 sliced green onions
1. Cook pasta i boiling water until done to your liking.
2. Melt butter in a large skillet and saute garlic for one minute. Add lemon zest, lemon juice, salt and pepper, simmer for one minute. Add pasta and toss until coated. Toss in remaining ingredients.
3. Eat and enjoy!
Tips- Serve with additional Parmesan Cheese.
