Red Velvet Cupcakes

cupcake heavenLast night was our annual Christmas get together with my best friends. It was amazing as usual, a little wine, great food, amazing company, and presents! We all had fun opening our first present of the year and then spent the remainder of the evening watching Indiana Jones and the Last Crusade….much better than Temple of Doom if you ask me, that one kind of freaked me out! For dessert I made not one but two kinds of cupcakes (check back tomorrow for the yummy gingerbread cupcake recipe) and this was the favorite of the two.

Makes 12 cupcakes.

  •  1 1/4 cups flour
  •  1/4 cup unsweetened cocoa powder
  •  1/2 teaspoon baking soda
  •  1/4 teaspoon salt
  •  1/2 cup butter, softened
  •  1 cup sugar
  •  2 eggs
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/2 (1 ounce) bottle McCormick® Red Food Color
  • 1 teaspoon McCormick® Pure Vanilla Extract
  • Vanilla Cream Cheese Frosting:
  • 1/2 (8 ounce) package cream cheese, softened
  • 2 tablespoons butter, softened
  • 1 tablespoon sour cream
  • 1 teaspoon McCormick® Pure Vanilla Extract
  • 1 1/3 cup icing sugar

1. Beat together butter and sugar until light and fluffy. Beat in the eggs, food coloring, vanilla and sour cream. Beat in dry ingredients and then the milk. Scoop into muffin pan that has been lined with paper cups.

2. Bake at 350 degrees for about 20 minutes, may need a few extra minutes check with a toothpick to make sure inside has been cooked. Cool,

3. For icing beat together cream cheese, butter, sour cream and vanilla. Add sugar 1/3  cup at a time. Use decorating bag to pipe onto cooled cupcakes. Decorate as desired.
